Several vegetables of Pajottenlander vegetable juices are lactic acid fermented: carrots for the carrot juice lactofermented, red beetroot for the red beetroot juice, carrots, red beetroot, celery and sauerkraut for the Health Drink, all vegetables for the Vitality Drink.
Immediately after harvesting, the freshly squeezed juices are inoculated with lactic acid bacteria. The fermentation of carbohydrates and sugars, which are naturally present in vegetables, ensures that racemate arises (a mixture of right- and left-turning lactic acid).
